Veggie Burrito recipe - How to make Veggie Burrito

3 tsp oil
3 to 4 cloves of garlic (lehsun)
1/2 cup leftover rajma
1/2 cup sweet corn (makai ke dane)
1/2 cup leftover rice ( chawal)
1 tsp chilli powder
1 cup sliced onions
1 green capsicum
1 cup mushrooms (khumbh)
4 leftover rotis
1 cup shredded vegetables (lettuce , carrotand onions in equal proportions)
1 cup leftover salsa
1 cup salted hung curds (chakka dahi) or
coriander (dhania) for garnishing

  1. Heat the oil in broad pan, add the garlic and sauté on a medium flame for few seconds.
  2. Add the rajma, corn, rice, chilli powder and mix well. Remove from the flame and keep aside.
  3. Heat a grill pan to high and grill the onions, mushrooms and bell peppers in little oil. Keep aside.
  4. Warm the rotis on a hot tava.
  5. For serving, take a roti, add some shredded lettuce, carrots and green onion. Add the rice mixture along with the grilled onions, mushrooms and bell peppers.
  6. Top it with the salsa, curd and coriander.
  7. Wrap and serve immediately.

    Handy tip:
  1. If marinated in a mixture of 1 tsp oil,2 tsp vinegar, 1 tsp chilli flakes and salt for 15 min, red onions, bell peppers and mushrooms tastes better when grilled.
