For Whole Wheat Vegetable Noodles
3/4 cup cooked whole wheat noodles
1 tsp olive oil
1 tsp finely chopped garlic (lehsun)
1/2 cup chopped spring onions whites and greens
1/4 cup thinly sliced carrot
1/4 cup shredded cabbage
1/4 cup thinly sliced capsicum
1/2 cup bean sprouts
salt to taste

  1. Heat the olive oil in a broad non-stick pan and add the garlic.
  2. Add the spring onions, carrots, cabbage corn, capsicum, bean sprouts and salt and sauté over a high flame for 3 to 4 minutes.

    1. This hakka noodles recipe is diabetic friendly so, we are making use of whole wheat hakka noodles instead of regular ones which are made with refined flour.
    2. To boil gehun hakka noodles, boil enough water in a deep non-stick pan.
    3. Add salt and mix well.
    4. Once the water starts boiling, add the noodles.

    6. Remove from the flame and drain out all the excess water.
    7. Pour some cold water on the noodles to stop further cooking.

    1. To make diabetic friendly veg noodles, heat the oil in a non-stick pan.
    2. Once the oil is hot, add garlic. You can even toss in some ginger for zesty yet sweet and warm flavor.
    3. Add spring onion whites and greens.

    Hakka noodles are usually made with oodles of oil and less vegetables. Here, I salute you Tarla Ma'am for making it healthy by adding less noodles, using less oil and adding soo many vegetables. And trust me, it's equally tasty...this recipe is also for those people who wish to lose weight!

    Lots of vegetables and smaller proportion of noodles. Perfect for eating healthy. Soya sauce adds that nice tinge.
