To make bajra methi paneer paratha, for the dough in a blender lightly crush the fenugreek leaves and the garlic with a little salt. Combine the bajra flour, crushed fenugreek leaves and salt and knead into a soft dough using approx. 1/4 cup of hot water. Keep aside. Then divide the dough into 4 equal portions and roll out a portion in between two greased plastic sheets into a circle of approx. 100 mm. to 125 mm. (4" to 5") diameter circle. Place a portion of the filling mixture on one half of the rolled circle and fold it over to make a semi-circle. Lift the paratha carefully and place it on a greased non-stick tava. Cook the paratha on a slow flame using 1/2 tsp of oil till they turn golden brown in colour from both sides. This would take approx. 1½ minutes. Cook the centre of the paratha by holding the paratha with a pair of tongs in a vertical position and cooking till it turns golden brown in colour. Repeat with the remaining dough portions and filling mixture to make 3 more parathas. Serve the bajra, methi and paneer parathas hot.

1 cup fenugreek (methi) leaves , chopped
2 large garlic (lehsun) cloves , chopped
1 tsp low fat curds (dahi)
salt to taste
To Be Mixed Into A Filling
1/2 cup crumbled low fat paneer (cottage cheese)
1/2 tsp finely chopped green chillies
1/8 tsp turmeric powder (haldi)
1/4 tsp dried fenugreek leaves (kasuri methi)
3 tbsp chopped coriander (dhania)
1/2 cup finely chopped tomatoes
salt to taste
