The Beetroot and Fruit Salad is a delicious combination of cooked beetroot cubes with sweet banana and apple, and tangy orange, pineapple and sweet lime segments, with a crunchy dressing dominated by orange squash and crushed peanuts. A topping of crisp peanuts and zesty pomegranate seeds add to the aroma and flavour of this refreshing salad.

Makes 6 to 8 servings
3/4 cup orange segments
3/4 cup sliced apples
1/2 cup banana cubes
3/4 cup pineapple cubes
3/4 cup sweet lime (mosambi) , segments
1 cup boiled and peeled beetroot cubes
To Be Mixed Into A Dressing
2 tbsp olive oil
1 tbsp vinegar
1 tbsp orange squash
1 tsp finely chopped roasted peanuts
2 tsp powdered sugar
salt and freshly ground black peppercorns (kalimirch) to taste
For The Topping
2 tbsp pomegranate seeds (anardana)
5 tbsp roasted and chopped peanuts

- Combine all the fruits and beetroot in a large bowl and toss well. Refrigerate for 1 hour.
- Just before serving, pour the dressing on top and serve immediately topped with pomegranate and peanuts.
