Beetroot Rice ( Beetroot Pulao) recipe - How to make Beetroot Rice ( Beetroot Pulao)

For Beetroot Rice
3/4 cup grated beetroot
2 cups cooked rice (chawal) or leftover rice
1 1/2 tbsp peanut oil
1 cardamom (elaichi)
1 clove (laung / lavang)
1 small stick cinnamon (dalchini)
1 bayleaf (tejpatta)
1 tsp cumin seeds (jeera)
1/2 cup sliced onions
1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/4 tsp cumin seeds (jeera) powder
salt to taste
For beetroot rice
- For beetroot rice
- To make {span class="bold1"}beetroot rice{/span}, heat the oil in a broad non-stick pan, add the cardamom, clove, cinnamon, bayleaf and cumin seeds and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for another 2 to 3 minutes.
- Add the chilli powder, turmeric powder, coriander powder and cumin seeds powder and sauté on a medium flame for a few more seconds.
- Add the beetroot and sauté on a medium flame for another 2 minutes.
- Add the salt and ¼ cup of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the rice, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Discard the cardamom, cloves, cinnamon and bayleaf.

Helpful notes for Beetroot Rice (Beetroot Pulao)
1. For preparing the beetroot rice, the most ideal type of rice would be leftover rice or rice which is cooked almost 3-4 hours prior so, they will have very less moisture. If you make use of hot rice, they will be soft and mushy resulting into a lumpy beetroot pulao, so make sure the rice grains are cooled completely before adding.
2. You can cook the rice in a pan or the cook the rice in pressure cooker. Also, the grain type i.e. short grain or long-grained depends on your preference. Ideally, pulao recipes are made using long grained basmati rice which is aged and aromatic to get the perfect texture.
3. We will be using grated beetroot in the beetroot rice recipe, but to have a unique bite you can even add around ¼ cup of chopped beetroot.
4. The beetroot rice recipe has sweet and savory notes. This is an ideal lunch-box recipe for kids as the rice offers a combination of flavours with sweetness from beetroot and hotness from dry spices. Fortify the beetroot pulao recipe with an addition of chopped vegetables like French beans, cauliflower, green peas, carrots, corn, etc.
5. We have made this quick and easy rice recipe especially for kid’s lunchbox so, we have used minimal spices but, you can increase the quantity as per your liking.
6. Add finely chopped green chilies, garlic or ginger-green chili- garlic paste to make it more delicious.
How to make Beetroot rice recipe:

For making the Beetroot Rice, heat the oil in a broad non-stick pan. You can even make use of ghee to prepare the beetroot pulao.

Once the ghee is moderately hot and melted, we will add whole spices like the cardamom and clove.

Also, we will add cinnamon and bay leaf.

Furthermore, add the cumin seeds.

Sauté the whole spices on a medium flame for a few seconds or till they release a nice aroma. These spices will give a delicious flavour to Beetroot rice.

Add the onions.

Sauté on a medium flame for another 2 to 3 minutes.

Once the raw smell of onion is gone, add the chilli powder.

Add the turmeric powder.

Add the coriander powder and cumin seeds powder.

Sauté the spices on a medium flame for a few more seconds. If you feel the spices are burning, add around 1 tbsp of water at this stage.

Add the beetroot and sauté on a medium flame for another 2 minutes. The grated betroot can be substituted with beetroot puree for a brighter colour.

Add the salt and ¼ cup of water.

Mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

Add the cooked rice.

Mix gently the Beetroot Rice and cook on a medium flame for 2 minutes, while stirring occasionally. If you mix vigorously, the long grained rice might break.

Discard the cardamom, cloves, cinnamon and bayleaf. Serve the Beetroot Rice with plain yogurt or raita.

Lovely! I didn''t have some of the spices available. Did a test-run for my lunch, then later did a load for a picnic do tomorrow. I particularly liked the use of a little bit of clove and cinnamon. I have added vegetables, dates and small chunks of cooked beetroot to my creation:) A very simple recipe, but be sure to have all the ingredients ready to go in before cooking; for example have all the measures of spices in a glass together ready to tip in.
Easy to make and tasted good. Please suggest a good raita to go with this one.
