1/2 cup ghee
a pinch of asafoetida (hing)
1 1/2 pounds of cauliflower
1 1/4 cups plain curds (dahi)
2 large onions , chopped
2 cloves of garlic (lehsun) , crushed
4 bayleaves (tejpatta)
1 1/4 cups hot water
salt to taste
6 cloves (laung / lavang)
6 black peppercorns (kalimirch)
1 black cardamom (badi elaichi)
2 cardamoms (elaichi)
2 inch piece cinnamon (dalchini) stick
1 tsp cumin seeds (jeera)
1 tsp chilli powder


  1. Heat 2 tbsp of ghee in saucepan with asafetida. add cauliflower and cook over medium heat for 5 min. transfer the cauliflower to a bowl and pour the yogurt on top.
  2. Add the remaining ghee and when hot add the onions, garlic, salt to taste, bay leaves, and all the spices except the chili powder.
  3. Return the cauliflower to the pan and stir to combine. cook over low heat for 10 min.
  4. Pour hot water and simmer stirring occasionally for 25 min.
