Tomato soup is very common and famous all over world. Here is tomato soup made from tomato puree, white sauce, grated cheese and boiled corn kernels. I am sure everyone will love this new version of tomato soup.

Ingredients

For The White Sauce
2 tsp butter
1 tsp plain flour (maida)
1 cup milk
salt to taste
2 tsp grated processed cheese

For The Tomato Puree
10-12 tomato
1/2 beetroot , peeled and chopped
1 onion , chopped
4 garlic (lehsun) cloves

Other Ingredients
2 cups tomato puree
2 cups white sauce , recipe above
salt to taste
1 tsp freshly ground black pepper powder
1/4 cup boiled sweet corn kernels (makai ke dane)
4 cups grated processed cheese

For The Garnishing
few mint leaves (phudina)
Method

For the white sauce

    For the white sauce
  1. Heat the butter in non-stick pan, add plain flour and saute for a minute.
  2. Add milk and 1 cup of water and mix well so that no lumps remain.
  3. Add the salt and grated cheese, mix well and cook on a slow flame, while stirring continuously, for 4-5 minutes or till the sauce becomes thick.
  4. Remove form the flame and keep aside.

For the tomato puree

    For the tomato puree
  1. Combine all the ingredients in a deep pan along with 4 cups water, mix well and boil for 5-10 minutes.
  2. Cool and blend in a mixer till smooth.
  3. Strain the mixture. Keep aside.

How to proceed

  1. In a non stick pan, combine the tomato puree, salt, pepper and mix well and boil for 10-15 minutes.
  2. Remove from the flame, add the white sauce and mix well.
  3. Boil for more 1 minute and remove from the flame.
  4. In soup bowl add 2-3 tsp boiled sweet corn kernels, pour soup over it and sprinkle 1 cup grated processed cheese.
  5. Similarly prepare other soup bowls.
  6. Serve hot garnished with mint leaves.
