Cowboy caviar is a perfect accompaniment to tortilla chips or any other starter. The cowboy caviar dip is a dazzling mix of red vinegar, cut avocadoes, peas, cilantro, onion and tomatoes.

Ingredients
Method


  1. In a large bowl, mix vinegar, hot sauce, oil,
  2. Garlic and pepper. peel, pit and cut avocado
  3. Into 1/2-inch cubes. add to vinegar mixture
  4. And toss lightly.
  5. Drain and rinse peas and corn. add peas,
  6. Corn, onion, cilantro and tomatoes. mix
  7. Gently to coat. add salt to taste.
  8. Refrigerate, well sealed.
  9. Serve as an appetizer with tortilla chips or
  10. Add 2 cups shredded cabbage to make a salad.
  11. Yield: 12 appetizer portions or 6 salad servings.
