Easy Corn Frankie, try this easy frankie which can be made with the left over rotis. It has spicy and tangy stuffing in it and also a layer of cheesy spread.

For The Stuffing
2 cups boiled and coarsely crushed sweet corn kernels (makai ke dane)
2 tsp chopped green chillies
2 tsp ginger-garlic (adrak-lehsun) paste
1 no.s finely chopped onions
1/4 cup grated carrot
1/4 cup grated paneer (cottage cheese)
2 tbsp chopped coriander (dhania)
1 tsp red chilli powder
1/2 tsp chaat masala
salt to taste
3 tbsp oil

To Be Mixed Together For The Dip
1/2 cup cheese spread
1/2 cup curds (dahi)
1 tsp chopped green chillies

Other Ingredients
4 no.s left over rotis
butter for cooking

For Serving
2 cubes grated processed cheese
1/4 cup green chutney

    For the stuffing
  1. Heat the oil in a kadhai, add green chillies and ginger garlic paste and saute for a few seconds.
  2. Then add onion and saute until translucent.
  3. Add carrots, coriander, sweet corn and paneer and mix well.
  4. Add the chilli powder, chaat masala, salt and mix well and cook for 3 to 4 minutes. Remove from the flame and keep aside.

How to proceed

  1. Place the left over rotis on a plate and spread the dip evenly and put the stuffing and roll and keep aside.
  2. Heat some butter on the tawa and place the prepared rolls and shallow fry till crispy golden brown.
  3. Place these frankies on the serving plate and spread grated cheese on top and some drops of green chutney.
  4. Serve hot.
