What is the recipe to store the fries in the freezer? Last time I tried, after par-boiling the potatoes, I dried those under the fan and kept in ziplock bags in the freezer. But many turned dark/ black. Don’t know the reason though

Hi, Make sure after you have parboiled the potatoes.. you rinse or keep it in ice cold water.. for sometime.. drain it.. pat them veey well.. make sure no water droplets are there.. then you can store it in a ziplock bag.. and freeze it.. The reason for getting it dark.. is.. to allow it to dry under fan. After pat dry immediately store it in the freezer.
