Carrot juice is juice produced from carrots, often marketed as a health drink. Carrot juice may be prepared at home or bought from a super market in tetra pak sealed packets. When preparing the carrots at home for juicing, wash the carrots thoroughly in cold water using a stiff vegetable brush. Scrape lightly, but do not peel, because valuable vitamins and minerals lie close to the surface. The juice should be used immediately after it is made.

How to select

The large, firm, dark-yellow carrots should be selected for juicing, rather than the light-yellow ones, because of their greater carotene content. Organic is better it will save you time and reduces exposure to potentially toxic substances. While buying carrot juice, choose the one which is 100% juice and is without any added flavors and colors.

Culinary Uses

· They provide a good base to mix in and experiment with other vegetables. They are not too sweet and not too bitter and hence ideal for vegetable juice combinations, cocktails and mocktails.
· Vary the quantities of ingredients to get a different taste. For example; adding more apple will give a sweeter taste, while more celery or green vegetables will give the juice more of a bite.

How to store

Keep juice tightly covered, and in the refrigerator to prevent loss of vitamin and mineral content through oxidation.

· Carrot juice has a particularly high content of Provitamin A (ß-carotene), but is also high in B complex vitamins like folic acid, and many minerals including calcium, copper, magnesium, potassium, phosphorus, and iron.
· Carrot juice is very high in beta-carotene, and is a cancer-fighting agent. Beta-carotene is a pigment substance found in plants that can often form into vitamin A. Vitamin A helps to promote growth for visual light and color, prevents drying of the skin and eyes, helps maintain the digestive system and urinary tracts, as well as enhances the fight towards bacterial infection
· Carrot juice may also be used to cleanse to liver and excrete fats and bile from the body
· Another vitamin contained in carrot juice is vitamin E
· Carrots also carry other vitamins such as B, C, D, E, and K, and minerals like calcium, phosphorous, potassium, sodium, and traces of protein. Juicing your carrots will help to promote healthier hair, skin, and nails.
