Vegetable burger is a healthy and delicious vegetarian burger recipe. Grated paneer and mashed boiled potatoes are made into a tikki( patties or cutlet) and roasted or shallow fried. The vegetable tikki or patty is then placed between the burger buns. An excellent snack and packed lunch, Tiffin option for children.

Ingredients
1 medium sized sweet potato (shakarkand)
1 cup whole bajra (black millet)
1 carrot , cut into 1/2 inch pieces
1 cup boiled or canned chickpeas(kabuli chana)
1 cup boiled green peas
1 small onion , finely chopped
1/2 cup chopped coriander (dhania)
3 tsp salt
1 tsp coriander (dhania) powder
1 tsp cumin seeds (jeera) powder
1 tsp fennel seeds (saunf) powder
1 tsp freshly ground black pepper (kalimirch) powder
2 tbsp oil
2 tbsp lemon juice
8 cabbage leaves
whole wheat/plain buns
Method
    Method
  1. Heat oven to 400°f.
  2. Wash and bake sweet potato until tender, about 40 minutes.
  3. Peel,mash and set aside.
  4. Meanwhile, rinse bajra. Bring 2 1/2 cups water to a boil; add bajra and 1 teaspoon salt. Cover and cook on medium low heater until all the water is absorbed, about 15 minutes.
  5. Remove from heat, and add to mashed sweet potato; mix to combine.
  6. Put carrot in a food processor and chop finely. Transfer to a small bowl. Add finely chopped onions.
  7. Heat 2 tsp oil in a skillet over medium-low heat. Add onions and carrots; cook until onions are translucent, about 7 minutes.
  8. Add to bajra mixture; stir to combine.
  9. Mash peas and chickpeas and add to bajra mixture.
  10. Add powdered coriander, cumin, fennel, lemon juice ,chopped coriander , remaining salt, and pepper. Mix well, and form into patties.
  11. Heat 2 tsp oil in a nonstick skillet over medium heat. Add patties, and cook until golden brown per side.
  12. Serve immediately on toasted buns lined with cabbage leaves.
