For The Crust
14 bourbon biscuits
2 tbsp butter (melted)

For The Coffee Mousse
1/2 cup vanilla flavoured agar-agar
2 cups milk
1 1/4 tsp coffee powder
1 cup beaten whipped cream

For The Garnish
1 tbsp coffee powder

  1. Crush the bourbon biscuits in a mixer.
  2. Mix the melted butter in the crushed biscuits.
  3. Spread evenly on the base of a 150 mm. (6") diameter tin and keep aside.

For the coffee mousse

    For the coffee mousse
  1. Mix the coffee powder with ¼ cup milk and keep aside.
  2. Heat the remaining milk and add the china grass and coffee mixture.
  3. Cook over a slow flame till the china grass dissolves.
  4. Strain the mixture and refrigerate till it is semi set.
  5. Fold in the whipped cream and keep aside.

How to proceed

  1. Pour the mousse on the bourbon crust and refrigerate until firm.
  2. Cut into wedges serve garnished with instant coffee powder.
