A cold macaroni salad with vinaigrette dressing is just perfect salad to make if your meal theme is italian. Chunky cubes of tomato, capsicum, chopped spring onions and olives add in various flavours and textures to the macaroni. You could sprinkle some oregano into it too. Serve chilled and watch your loved ones take second helpings!

Makes 4 to 6 servings
For The Vinaigrette Dressing (makes Approx. 1/2 Cup)
1/2 cup salad oil
2 tbsp vinegar
1/4 tsp mustard (rai / sarson) powder , readily available in the market
1 tsp sugar
salt and to taste
Other Ingredients
3/4 cup macaroni , cooked and drained
1/2 cup tomato cubes
1/2 cup capsicum cubes
3/4 cup chopped spring onions (with the greens)
3 tbsp vinaigrette dressing , recipe above
For The Garnish
5 to 6 stuffed olives , cut into halves

- Combine all the ingredients in a bowl, mix well and refrigerate for at least an hour.
