Makes 4 servings
For Lehsuni Palak Paneer
1 1/2 cups spinach (palak) puree
1 1/2 cups paneer (cottage cheese) cubes
1 tbsp oil
2 tbsp ghee
1 black cardamom (badi elaichi)
3 cloves (laung / lavang)
1 small stick cinnamon (dalchini)
1/2 tsp cumin seeds (jeera)
1/2 tbsp green chilli paste
2 tbsp finely chopped garlic (lehsun)
1 cup finely chopped onions
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 cup chopped tomatoes
1 tbsp fresh cream
1 tbsp dried fenugreek leaves (kasuri methi)
salt to taste
For The Tempering
2 tbsp ghee
1 tbsp roughly chopped garlic (lehsun)
1/2 tsp kashmiri red chilli powder
For lehsuni palak paneer
- For lehsuni palak paneer
- To make {span class="bold1"}lehsuni palak paneer{/span}, heat 1 tbsp oil in broad pan, shallow fry the paneer cubes on medium flame until golden brown from all sides.
- Immerse the paneer in a bowl of warm water and keep aside.
- Heat ghee in a deep pan, add cardamom, cloves, cinnamon and cumin seeds, sauté for few seconds.
- Add chilli paste, garlic and onions, cook on medium flame for 3 to 4 minutes until light golden brown.
- Add turmeric powder, chili powder, coriander cumin seeds powder and little water. Mix well.
- Add tomatoes and cook on medium flame for 2 minutes, while stirring occasionally.
- Add the spinach puree, shallow fried paneer cubes, salt and 1/4 cup water.
- Mix well and cook on medium flame for 2 minutes, while stirring occasionally.
- Add fresh cream and kasuri methi, cook for another 2 minutes.
- For the tempering, heat ghee in small pan, add garlic, sauté for few seconds.
- Switch off the flame and add kashmiri red chilli and kashmiri chilli powder.
- Pour the tempering over the sabzi.
- Serve {span class="bold1"}lehsuni palak paneer{/span} hot.
