To make mango puri, combine the mango cubes and powdered sugar in a mixer and blend till smooth. Roll out each portion of the dough into a 100 mm. (4”) diameter circle. Heat the oil in a deep non-stick pan and deep-fry, a few puris at a time on a medium flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Serve immediately.

  6. Deep fry on a medium flame, till they turn golden brown in colour from all the sides.

This puri was so good that I could not just wait to have them, they are so unusual and tasty that you can enjoy just plain and immediately after deep-frying. Perfect recipe to make in mango season.
