Sesame seeds are known as til in Hindi and jaggery is known as gud so when chikki is made with sesame seeds and jaggery it's called til gud chikki. Shiny white teeth and robust strong bones need a daily dose of calcium, and what better way to provide this essential nutrient than in the form of a crunchy mixed til chikki!

The ingredients of this mixed sesame seeds chikki such as sesame seeds, almonds and jaggery, are all calcium-rich foods, which help you avoid and overcome calcium deficiency.

We have used a mixture of white and black til to give a balanced flavour and attractive appearance to this Jar Snack, which is also very handy to carry this iron rich til gud chikki in a dabba to school or office, to munch on when you feel hungry.

Tips to make mixed til chikki: 1. Keeping this greased thali and rolling pin ready is important as once the mixture has been cooked, it has poured on the greased thali immediately. 2. To check if the jaggery is caramalised, drop the caramalised jaggery in ice cold water and it should form a hard ball. 3. Immediately pour the entire mixture over the greased thali or a smooth stone surface. If you don't do so it will form a hard shape which will prevent you from rolling. 4. When cool, cut into square pieces. 5. Number of chikki pieces depends on how thin you roll.

Mixed Til Chikki recipe - How to make Mixed Til Chikki

Ingredients


For Mixed Til Chikki
5 tbsp black sesame seeds (kala til)
5 tbsp white sesame seeds (til)
1/4 cup thinly sliced almonds (badam)
1 tsp ghee
1/2 cup roughly chopped jaggery (gur)

Method

  1. To make {span class="bold1"}mixed til chikki{/span}, heat a broad non-stick pan, add both the sesame seeds and dry roast on a slow flame for a few minutes. Keep aside.
  2. Heat a small non-stick pan, add the almonds and dry roast on a medium flame for 2 minutes. Keep aside.
  3. Heat the ghee in a broad non-stick pan, add the jaggery, mix well and cook on a slow flame for 2 minutes, while stirring continuously.
  4. Remove from the flame, add the roasted sesame seeds and almonds and mix very well.
  5. Immediately transfer the mixture on the back side of a greased thali or a smooth greased stone surface. Roll it out into a 250 mm. (10”) diameter thin circle using a greased rolling pin.
  6. Cut it into 10 mm. X 10 mm. (½’’×½’’) 12 square pieces using a sharp knife.
  7. Allow them to cool completely.
  8. Serve or store the {span class="bold1"}mixed til chikki{/span} in an air-tight container till use.

Keeping this greased thali and rolling pin ready is important as once the mixture has been cooked, it has poured on the greased thali immediately. Instead of a thali you can also grease a smooth platform. Use of a thick rolling pin is necessary for giving uniform pressure while rolling. Keep this aside.  
  2. Heat 1 tsp ghee in a pan.
  3. Add 1/2 cup roughly chopped jaggery (gur.

  5. To check if the jaggery is caramalised, drop little caramalised jaggery in ice cold water and it should form a hard shape. 
  6. Remove from the flame. Add the roasted sesame seeds .
  7. Add the roasted almonds.
  8. Mix thoroughly with the melted jaggery. 
  9. Immediately pour the entire mixture over the greased thali or a smooth stone surface. 
  10. Roll the chikki out into thin sheets using a greased rolling pin.
  11. Use a sharp knife to cut the chikki.
  12. When cool, cut into square pieces. 
  13. Serve mixed til chikki or store in an air-tight container at room temperature upto a week.
