Pina Colada and Fruit Salad

Pina Colada is the ever-popular combination of pineapples and coconut meat or coconut water. This tongue-tickling tropical combo comes to us in many forms ranging from juices and mocktails to salads too. Here, we toss this peppy duo with more fruits like bananas, berries and apples, and dress it in a luscious mixture of coconut milk and cream.
Grated coconut is added to the dressing to give it a nice, flaky texture. You can choose any fruits which are in season to make the Pina Colada and Fruit Salad. Apples and bananas are a good choice because they make the salad naturally sweet.

Makes 4 servings
1 cup pineapple cubes
1/2 cup chopped tender coconut meat
1/2 cup bananas cubes
1/2 cup apple cubes (unpeeled)
1/4 cup blueberries
To Be Blended Into A Coconut Dressing
2 1/2 tbsp coconut milk
1 tbsp grated coconut
1/2 tbsp fresh cream
salt and to taste
- Method
- Combine all the ingredients in a deep bowl and toss well.
- Add the prepared coconut dressing and toss well.
- Serve chilled.
