1. गौंट खाने योग्य गौंद होता है, जिसे पेड़ के तने से निकाला जाता है। गौंद के हल्के भूरे पीले रंग के दाने बाज़ार में आसनी से मिलते हैं। आपको इन कणों को तलकर फूलाना होता है और पाउडर बनाकर व्यंजन अनुसार प्रयोग कर सकते हैं। गौंद गरमाहट प्रदान करता है जिसे राजस्थान में ठंड के मौसम मे बहुत ज़्यादा पसंद किया जाता है। इसे खाने का सबसे मशहुर तरीका है स्वादिष्ट गौंट के लड्डू के रुप में। इस पारंपरिक ठंड के दिनों में बनाए जाने वाला व्यंजन को सुबह के नाश्ते में ग्लास भर गुनगुने दूध के साथ परोसा जाता है, और वहीं इसे मिठाई के रुप में परोसा जाता है।
