Ingredients


For Soba Noodles
2 cups boiled soba noodles (buckwheat noodles)
2 tsp sesame (til) oil
1 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
2 tbsp finely chopped celery (ajmoda)
1/2 cup thinly sliced onions
1/4 cup thinly sliced red capsicum
1/4 cup carrot juliennes
1/4 cup shredded red cabbage
2 tsp soy sauce
1/2 tsp sugar
2 tsp honey
salt to taste

For The Garnish
1 tsp roasted black sesame seeds (kala til)

Method

  1. To make {span class="bold1"}soba noodles{/span}, heat the oil in a deep non-stick pan, add the garlic, ginger and celery and sauté on a high flame for a few seconds.
  2. Add the onions, capsicum, carrot and red cabbage, mix well and cook on a high flame for 2 minutes, while stirring it continuously.
  3. Add the noodles, soy sauce, sugar, honey and salt, toss well on a high flame for 2 minutes, while stirring it continuously.
  4. Serve the {span class="bold1"}soba noodles{/span} immediately garnished with black sesame seeds.

For boiling soba noodles

  1. Before we begin making veg soba noodles recipe | Indian style soba noodles | eggless veg buckwheat noodles |  we will boil the buckwheat noodles. Boil enough water in a deep non-stick pan.
  2. Add 1 tsp of oil. This will prevent the noodles from sticking to each other while boiling.
  3. Add salt and mix well.
  4. Once the water starts boiling, add the soba noodles. Sometimes soba noodles that you get in the market are made with egg or a combination of wheat and buckwheat flour. So if you are following a vegetarian or gluten-free diet, make sure to read the packet carefully and buy accordingly.
  5. Mix well and cook on a medium flame for 8 to 10 minutes or till they are cooked while stirring occasionally. Refer to package directions to cook soba noodles until tender.
  6. Remove from the flame and drain out all the excess water.
  7. Pour some cold water on the noodles to stop further cooking. This process is called refreshing.
  8. Let all the water drain out and ensure that the noodles do not contain any moisture. Pour 1 tsp of oil over it.
  9. Mix it gently. This will prevent the noodles from sticking together while we do other preps. Keep aside.

How to make Soba Noodles

  2. Once the oil is hot, add the garlic.
  3. Add ginger for a zesty yet sweet and warm flavor.
  4. Add celery. Even in very little quantity celery really enhances the flavors of veg soba noodles.
  5. Mix well and sauté on a high flame for a few seconds.
  6. Add the onions.
  7. Add capsicum.
  8. Add carrot. Make use of crunchy vegetables to give a nice bite to the nutritious soba noodles. Add veggies that are easily available on hand like cabbage, bell pepper, baby corn, spring onion, broccoli to prepare vegetable soba noodles.
  9. Add the red cabbage. This gives a nice colour.
  10. Mix well and cook on a high flame for 2 minutes, while stirring it continuously. Cooking on high heat cooks the vegetables faster and also helps in retaining their color and crunch.
  11. Add the boiled soba noodles. If you’d like to add more plant-based protein to veg soba noodles, feel free to add in some chopped tofu or paneer.
  12. Add soy sauce. We are using soy sauce in limited quantity but you can add more or less as per your preference. Also, we have used regular soy sauce but, you may use a combination of regular and dark soy sauce to give soba noodles a darker shade and deepen the flavor.
  13. Add sugar.
  14. Add honey.
  15. Add salt. We have added both sugar and honey to give a mildly sweet flavor to soba noodles.  If you still wish to add some pungency or hotness to the Soba noodles, add a little black pepper powder, chili sauce, chili flakes, sriracha sauce or chili powder.
