Soya Scoth Egg recipe - How to make Soya Scoth Egg

500 gms boiled soya kheema , see handy tip
6 boiled eggs
4 tbsp besan (bengal gram flour)
4 tsp chopped onions
1 1/2 tsp ginger-garlic paste
2 tsp chopped green chillies
2 tsp roasted cumin seeds (jeera) powder
1 tsp garam masala
salt to taste
1 tsp sugar
2 tsp raisins (kismis)
2 cups bread crumbs
1/2 cup chopped coriander (dhania)
1 cup oil for deep-frying

  1. Heat 1 teaspoon oil in a pan add onions and saute, add ginger -garlic paste , green chilies and saute till light golden brown in colur.
  2. Add soya keema, cumin powder, salt, sugar, besan and garam masala, saute for 5 minutes, add coriander and mix well.Keep aside to cool.
  3. Divide the soya-kheema mixture into 6 portions.
  4. Take a portion of the soya-keema mixture on the palm and flatten it. Place 1 egg in the centre and cover it completely with the soya kheema mixture, then roll it in bread crumbs.
  5. Heat oil in a kadhai and deep-fry the scotch egg until golden brown from all sides. Drain on and absorbent paper.
  6. Repeat steps 4 and 5 to make more scotch eggs.
  7. Sprinkle Chat masala and serve it immediately with with mango, onion wine Salsa.

    Handy tip:
  1. To make soya keema, soak soya chunks or granules in hot water till they soften, discard the water and rinse in cold water, squeeze off the excess water and set aside.
  2. Pulse the chunks to whatever texture you desire, set aside.
