4 medium-sized (200 g) potatoes, peeled and cubed
5 tsp (25 ml) oil
3 1/3 tbsp (50 g) butter
2 medium-sized (100 g) onions, chopped
1/2 each (50 g) red and yellow capsicum, chopped
2 cups (300 ml) Vegetable Stock
1 tsp (5 gms) chilli powder
3 (10 g) green chillies, deseeded and chopped
1 cup (100 g) sweet corn (makai ke dane)
seasoning to taste
3 1/3 tbsp (50 ml) double cream or thick cream
3 1/3 tbsp (50 ml) coconut milk
3/4 cup (20 g) chopped coriander (dhania)


  1. Sauté the potato cubes in oil along with 30 g of the butter, and the chopped onion, till the onion turns translucent;
  2. Add the peppers, vegetable stock (made from boiling root vegetables and trim- mings to get flavoured stock), chilli powder and chopped green chillies. allow the stock to boil.
  3. Add the corn, seasoning, cream and coconut milk. garnish with chopped coriander leaves.
  4. Divide the remaining butter into four small cubes and float on top of the soup to melt just before serving.
