Tortilla Bake ( Know Your Dals and Pulses ) recipe - How to make Tortilla Bake ( Know Your Dals and Pulses ) Tags BakedSautePressure CookerDeep Pan Soaking Time: 8 Hours Preparation Time: 30 mins   Cooking Time: 60 mins   Baking Time: 20 Minutes Baking Temperature: 200.C (400.F) Total Time: 5709 hours 30 minutes    4Makes 4 servings Show me for servings Ingredients For The Tortillas3/4 cup maize flour (makai ka atta)3/4 cup plain flour (maida)4 tsp oil3/4 tsp saltFor The Refried Beans2 tbsp butter2 tbsp oil1/2 cup sliced onions1 clove garlic (lehsun)3 green chillies , finely chopped1 cup red rajma (kidney beans) soaked overnight1 cup chopped tomatoes2 tsp sugar1 tsp roasted cumin seeds (jeera) powder salt to tasteFor The Vegetable Layer1 tbsp oil1/2 cup sliced onions1/4 cup chopped capsicum1/2 cup sweet corn kernels1 cup sliced mushrooms (khumbh)1 tsp tabasco sauce salt and to taste for the white sauce1 tbsp butter1 tbsp plain flour (maida)1 cup milk salt and to tasteOther Ingredients1/2 tsp butter for greasingFor The Garnish1/2 cup grated processed cheese Method For the tortillasFor the tortillasCombine both the flour, oil and salt in a bowl and mix well.Add enough warm water and knead into a soft dough.Divide the dough into 3 equal portions and roll out each portion into a cirle of 175 mm. (7”) diameter.Cook each dough circle on a tava (griddle) lightly on both the sides and keep aside.For the refried beansFor the refried beansHeat the butter and oil in a pressure cooker, add the onions and sauté till the onions translucent, while stirring continuously.Add the garlic and green chillies and sauté for a few more seconds.Add all the remaining ingredients and pressure cook for 4 to 5 whistles or till the rajma are cooked.Allow the steam to escape before opening the lid. Keep aside to cool.Mash lightly with a spoon and keep aside.For the vegetable layerFor the vegetable layerHeat the oil in a deep pan, add the onions and sauté till the onions translucent, while stirring continuously.Add the onions, capsicum, corn and mushrooms, mix well and cook on a medium flame till the mushrooms turn sft.Add the tabasco suuce, salt and pepper and mix well. Keep aside.For the white sauceFor the white sauceHeat the butter in a deep pan, add the flour and cook on a slow flame until froth apperars, while stirring continuously.Add the milk gradually and stir continuously until the sauce thickens.Add the salt and pepper and mix well. Keep aside.How to proceedHow to proceedGrease a 200 mm. (8”) ovenproof dish lightly with butter.Place one tortilla at the bottom of the dish and spread the refried beans over the tortilla.Place another tortilla on top and spread the vegetable layer evently over it.Finally place the third tortills on top and pour the white sauce evenly over it.Garnish with grated cheese and bake in a pre-heated oven at 200. C (400. F) for 15 minutes. Serve hot.
