For the salad
1 head lettuce
1 small cauliflower
2 medium carrots
3/4 cup fresh green peas
3/4 cup chopped french beans
4 small boiled potatoes (optional)
4 radish (mooli)

For the dressing
4 tbsp vinegar
1 tsp mustard (rai / sarson) powder
1 onion, finely chopped
1 small bunch parsley, finely chopped
1 tsp sugar
8 tbsp oil
1 tsp salt
1/4 tsp pepper powder


For the salad

    For the salad
  1. Place the lettuce leaves in cold water until crisp. Wash the cauliflower and break into florets. Peel and slice the carrots.
  2. Bring a little salted water to the boil. Add the cauliflower florets and carrot slices, blanch for 5 minutes and then drain.
  3. Boil the peas and beans, taking care to see that they remain crisp and are not overcooked.
  4. Peel and slice the potatoes.
  5. Clean and finely slice the radishes.

  1. Mix all the ingredients and beat very well.

  1. Arrange the vegetables decoratively in a flat serving dish.
  2. Just before serving, pour the dressing over the salad.
  3. Serve cold.
