Vegetarian Paneer Eggs recipe - How to make Vegetarian Paneer Eggs

For The Covering
250 gms grated paneer (cottage cheese)
2-3 slices of bread
2 tbsp cornflour
1 tsp ginger-green chilli paste
1/2 tsp white pepper powder
salt to taste

For The Stuffing
1/2 cup grated pumpkin
2 tbsp soya granules
1 1/2 tsp ginger-garlic (adrak-lehsun) paste
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp garam masala
salt to taste
1/2 tbsp lemon juice
1 1/2 tsp oil
oil for deep frying

  1. Blend the bread slices to prepare the crumbs.
  2. Add all the remaining ingredients and mix well.
  3. Divide the mixture into 5-6 equal portions and shape them into small equal sized balls.
  4. Keep aside.

For the Stuffing

  1. Soak the soya granules in hot water for 10 minutes.
  2. Squeeze them well and blend in a mixer to a coarse mixture.
  3. Heat the oil in a pan, add the ginger-garlic paste and saute for 2 minutes.
  4. Add the pumpkin and sauté till they are almost cooked.
  5. Add the turmeric powder, chilli powder, garam masala, salt, crushed soya granules and sauté till almost dry.
  6. Remove from the flame, add the lemon juice and mix well. Cool and divide into 5-6 balls.

How to proceed

  1. Flatten the Paneer ball, place the pumpkin ball on it and seal well.
  2. Shape them like an egg and repeat with all the balls.
  3. Roll in corn flour and dust off the extra corn flour.
  4. Heat the oil in a kadhai and deep fry till they turn golden brown.
  5. Cut into 2 halves and serve hot with chutney or ketchup.
