For Dudhi and Chana Dal Sabzi
2 cups bottle gourd (doodhi / lauki) cubes
1/2 cup chana dal (split bengal gram) , soaked for 2 hours and drained
salt to taste
1 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
1/2 cup chopped tomatoes
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder

For The Garnish
1 tbsp finely chopped coriander (dhania)

Method

    For dudhi and chana dal sabzi
  1. To make dudhi and chana dal sabzi, combine the bottle gourd, chana dal, salt and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
  2. Allow the steam to escape before opening the lid. Keep aside
  3. Heat the oil in a deep non-stick kadhai and add the mustard seeds and cumin seeds.
  4. When the seeds crackle, add the asafoetida and sauté on a medium flame for a few seconds.
  5. Add the tomatoes, chilli powder, turmeric powder, coriander-cumin seeds powder, little salt and 1 tbsp of water and mash the tomatoes lightly using a potato masher. Mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  6. Add the bottle gourd-chana dal mixture, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.
  7. Serve the dudhi and chana dal sabzi hot garnished with coriander.

  1. To make Dudhi Chana Dal Sabzi, take a pressure cooker add the bottle gourd into it, also called as doodhi. Do not cut this in advance and keep as it will become darker in colour.   3. Add the salt.
  4. Add 1 cup of water.
  5. Mix it well and pressure cook for 3 whistles.
  6. Allow the steam to escape before opening the lid. Keep aside.
  7. Take a deep non-stick kadhai or a deep non-stick pan, add the oil and heat it up.
  8. Add the mustard seeds.
  9. Add the cumin seeds. Both mustard and cumin seeds impart a lovely flavour to the Doodhi and Chana Dal Subzi.
  10. When the seeds crackle, add the asafoetida. This gives a nice flavour and also helps in digestion.
  11. Sauté on a medium flame for a few seconds.
  12. Add the tomatoes. Use red riped tomatoes and chop with a sharp knife it will be easier and faster.
  13. Now, we will add the masalas. First, add the chilli powder for the spice.
  14. Add the turmeric powder. This gives a nice little yellow colour to the Doodhi and Chana Dal Subzi.
  15.  Add the coriander-cumin seeds powder.
  16.  Add little salt and 1 tbsp of water. Water is added so the masalas do not burn.
  17. Mash the tomatoes lightly using a potato masher.
  18. Mix well and cook on a medium flame for 1 to 2 minutes, while stirring in between.
  19. Add the bottle gourd-chana dal mixture.
  20. Mix well and cook Dudhi and Chana Dal Sabzi (Lauki Chana Dal Sabzi) on a medium flame for another 2 minutes, while stirring occasionally.
  21. Serve the Doodhi and Chana Dal Sabzi hot garnished with coriander.

I followed this recipe and loved it first time Next time around I did a minor modification, where I prepared the masala in the cooker itself .. and then added lauki and chana dal. I felt the lauki was more flavorful that way. Please tell me if that was an incorrect way of cooking it, i am a beginner and still exploring. Thanks a ton though :)

Suggestion: it’s tasty n simple recipe. I tried this recipe but used Chana instead of Chana dal. It’s good n tasty. I think while seasoning, if we add a teaspoon full of ginger garlic paste might enhance the flavour n taste.
