  1. Place the wine and the sugar in a saucepan, mix well and cook on a medium flame till the sugar is dissolved.
  2. Bring to a boil and then remove from the flame.
  3. Meanwhile, puree the strawberries in a blender.
  4. Add the strawberries, orange juice and cardamom to the wine mixture, mix well and keep in the refrigerator to chill.
  5. Before serving, beat the heavy cream with a mixer until thick and frothy.
  6. Add one spoonful of cream to each bowl of soup and swirl.
  7. Garnish with a sprig of mint.

I tried this Recipe and its very good. Most strawberry soup is really more of a smoothie and no cardamon. I did change this just a tad. After strawberrys are in blender I strain it using 3 to 4 layers of cheesecloth to get a clear soup. I tried ading just a pinch of a pinch of Safron and it woke ot up a bit. Regardless this recipie is nutricious and very darn good.
