Ingredients

2 cups apple cubes (unpeeled)
1/2 cup orange segments
5 tbsp sliced bananas
1 1/2 cups cauliflower florets
1 tsp oil
1/2 tbsp vinegar
salt and freshly ground black pepper (kalimirch) to taste
2 tbsp deseeded and sliced dates (khajur)

For The Orange Dressing
1/2 cup thick fresh low-fat curds (dahi)
2 tbsp fresh orange juice
1/2 tsp mustard (rai / sarson) powder
1/2 tsp powdered sugar
a pinch of salt
1/2 tsp lemon juice
1/2 tsp grated lemon rind

  1. Combine all the ingredients in a bowl and mix well. Refrigerate for at least an hour. Keep aside.

  1. Steam the cauliflower florets in a steamer for 8 to 10 minutes and cool completely.
  2. Transfer the cauliflower florets into a bowl, add the oil, vinegar, salt and pepper, mix well and keep aside to marinate for 5 minutes.
  3. Add all the remaining ingredients including the dressing and mix well.
  4. Serve immediately.
