ponk bhel is a regional and seasonal speciality, made with a Gujarati delicacy called ‘ponk’. It is basically a savoury snack which is commonly eaten in Indian winters.

During a brief period in the winter months, the jowar or white millet grain is very tender and juicy. At this stage, it is called ponk and is the best time to make hurda bhel. These tender seeds are harvested and roasted or cooked in other ways. Generally, in the villages, the ponk is picked from the fields and cooked then and there.

Hurda and tender jowar are the other names for ponk. Ponk is super nutritive and healthy and also makes an excellent gluten free cereal.

1 1/2 cups ponk / ponkh (hurda)
2 tbsp finely chopped onions
2 tbsp finely chopped tomatoes
1 1/2 tbsp sweet chutney
2 tsp green chutney
1 tbsp finely chopped coriander (dhania)
1/2 tsp finely chopped green chillies
2 tsp lemon juice
1/2 tsp chaat masala
salt to taste
1 tbsp mimosa sugar balls
1/2 cup black pepper lemon sev

  1. Combine all the ingredients in a deep bowl and toss well.

  1. To prepare winter special ponk bhel, in a deep bowl take ponk. These have been rinsed using water, drain completely and then used. Some people even prefer roasting hurda before making chaat.
  2. Add black pepper lemon sev. Instead of regular besan sev, we make use of Black Pepper Lemon Sev Recipe which adds in spicy and tangy notes to the hurda bhel.
  3. Add sweet chutney. You can refer to this recipe with detailed step by steps to make homemade Khajur Imli ki Chutney.
  4. Add green chutney. The quantity of chutney can be adjusted to suit your preference. Also, add in some curd if you like.
  5. Add lemon juice.
  6. Add finely chopped onions. Jains can skip adding the onions.
  7. Add finely chopped tomatoes.
  8. Add finely chopped coriander.
  9. Add chaat masala. I have used homemade chaat masala for this ponkh bhel recipe.
  10. Add mimosa sugar balls.
  11. Add salt to taste.
  12. Combine all the ingredients and toss well.
  13. Transfer into small bowls or serving plates. Serve ponk bhel immediately.

Is the measurement for black pepper correct? 1/4th cup won''t be too spicy???

I loved this recipe when i saw it and could imagine that it will surely taste very good, so I told my wife to make it for me for snacks one day and it was tasting soo good loved it...
