Ingredients


For Quick Paneer Sabzi
3 cups paneer (cottage cheese) cubes
3 whole dry kashmiri red chillies , broken into pieces
1 tbsp coriander (dhania) seeds
2 tbsp oil
1 tsp cumin seeds (jeera)
1 cup coloured capsicum strips
1 1/2 cups chopped tomatoes
salt to taste

Method

For quick paneer sabzi

  1. To make {span class="bold1"}quick paneer sabzi{/span}, combine the red chillies and coriander seeds in a small broad non-stick pan and dry roast on a slow flame for 1 minute. Keep aside to cool slightly.
  2. Blend in a mixer to a smooth fine powder and keep aside.
  3. Heat the oil in a non-stick kadhai and add the cumin seeds.
  4. When the seeds crackle, add the capsicum strips and sauté on a medium flame for 1 to 2 minutes.
  5. Add the prepared masala and saute for a minute.
  6. Add the tomatoes, salt and 4 tbsp of water, mix well and cook on medium flame for 5 minutes, while stirring occasionally.
  7. Add the paneer, mix gently and cook on medium flame for another 1 to 2 minutes, while stirring occasionally.
  8. Serve the {span class="bold1"}quick paneer sabzi{/span} hot.
