  1. To make gujarati suva kadhi combine the besan, curds and 21/2 cups of water in a non-stick pan, whisk well till no lumps remain and bring to boil.
  2. Add the ginger-green chilli paste, curry leaves, sugar and salt and mix well and cook for 2 to 3 minutes, while stirring continuously.
  3. Heat the oil in small non-stick pan and add the cumin seeds and mustard seeds.
  4. When the seeds crackle, add the asafoetida and kashmiri red chilli and sauté on a medium flame for few seconds.
  5. Add this tempering to the kadhi and mix well.
  6. Add the dill leaves, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Serve gujarati suva kadhi hot.

  1. In a non stick pan put 2 tbsp besan (bengal gram flour).
  2. Add 2 cups curds (dahi).
  3. Add 2½ cups of water.
  4. Whisk well till no lumps remain.
  5. Transfer to a deep non stick pan.
  6. Bring to a boil.
  7. Add 1 tsp ginger-green chilli paste.
  8. Add curry leaves (kadi patta).
  9. Add 2 tsp sugar (approx.). NOTE. If curds are sour, then add more sugar.
  10. Add salt to taste. We added 1 tsp salt.
  11. Mix well.
  12. Cook for 2 to 3 minutes, while stirring continuously.

  2. Add 1/2 tsp cumin seeds (jeera).
  3. Add 1/2 tsp mustard seeds ( rai / sarson).
  4. Let the seeds crackle.
  5. Add a pinch of asafoetida.
  6. Add whole dry red chilli , broken into pieces.
  7. Sauté on a medium flame for few seconds.
