Although of French origin, crepes are used extensively in Mexican cuisine, served with flavourful and colourful fillings of exciting textures. Made with a batter of plain flour, crepes have a slightly chewy texture and neutral flavour that work well with most stuffing mixtures and toppings. When preparing the crepes take care to cook them to just the right level as overcooking might result in a crisp texture that gets hard on cooling.

Ingredients

1/4 cup plain flour (maida)
1/4 cup cornflour
1/4 cup milk
2 tbsp powdered sugar
1 tsp melted butter
a pinch of salt
butter for greasing and cooking

Method
  1. Combine the plain flour, cornflour, milk, sugar, butter, salt and ¼ cup of water in a deep bowl and mix well using a whisk till no lumps remain.
  2. Heat a 150 mm. (6”) non-stick pan and brush it lightly with butter. Cool slightly, pour a ladleful of the mixture into the pan and tilt in a circular motion to make a 150 mm. (6”) round.
  3. Cook it, using a little butter, till light pink spots appear on both the sides.
  4. Repeat with the remaining batter to make 5 more crêpes.
  5. Use as required.
