Badam Paak recipe - How to make Badam Paak

Makes 4 servings
500 gms almonds (badam)
500 gms grated low fat mava (khoya)
500 gms sugar
1 1/2 cups ghee
10 cardamoms
1 nutmeg (jaiphal) , grated
2 cups ghee
Method
- Method
- Heat 1/2 the ghee in a pan, add the sugar and water and cook on a slow flame till sugar melts.
- Increase the heat slowly and let the syrup boil for a few mins.
- Add the remaining ghee and mava gradually stirring constantly.
- Add the sliced almonds and pure ghee and continue cooking till the mixture leaves the sides of the vessel.
- Remove from the flame, add the cardamoms and nutmeg when slightly cool.
- Spread on a greased thali and cut into squares.

Am planning to try this but am wondering which is the correct ghee amount?? Or do I really need 3.5lbs of ghee??? In which case I will skip this recipe cause that is a lot ghee plus the oil from the almonds!! :)
