The combination of veggies in the basic brown stock is such that it gives a light tinge of brown to the soup it goes into. Packed with nutrients from healthy veggies like bottle gourd, carrots, potatoes, tomatoes, and more, this is indeed a desirable addition to your soup.

Basic Brown Stock recipe - How to make Basic Brown Stock

Preparation Time:    Cooking Time:    Total Time:    Makes 4 cups

Ingredients

1 cup roughly chopped carrots
1/4 cup chopped french beans
1/2 cup roughly chopped onions
1/2 cup roughly chopped potatoes
1/2 cup roughly chopped tomatoes
1/4 cup roughly chopped cabbage or bottle gourd (doodhi / lauki)

Method
    Method
  1. Boil 5 cups of water in a deep non-stick pan.
  2. Add all the vegetables and boil on a high flame for 10 minutes.
  3. Strain the water using a strainer and discard the vegetables.
  4. Use as required.

good stock! rich in flavour and nutrition, though not very different from the white stock!
