Bubble and Squeak Pattice

You can use your leftover potatoes, sprouts or cabbage from a previous meal to make these exciting cakes. They make a delicious sounding bubbling and squeaking noise that makes one's water mouth. They are a perfect balance of carbohydrates and proteins, and of course the most important thing - great taste!

Preparation Time:    Cooking Time:    Total Time:    Makes 4 serving

Ingredients

1/2 cup chopped onions
2 tsp garam masala
250 gms boiled potatoes
150 gms boiled moong (whole green gram) sprouts
1/4 cup sliced cucumber
3 tbsp curds (dahi)
1/4 cup chopped mint leaves (phudina)
salt to taste
oil for cooking

Method
    Method
  1. Heat 1 tsp oil in a pan, add the onions and saute until softened.
  2. Add the garam masala and cook for 2 minutes.
  3. Add the potato and sprouts and mash with a fork.
  4. Add salt, mix well and Cool and divide into 4 cakes.
  5. Heat 2 tsp oil in a non-stick frying pan.
  6. Cook the cakes until golden on both sides and heated through.
  7. Toss the cucumber with the yoghurt, mint and salt.
  8. Serve with the cakes.
  9. This makes an exciting, tasty yet very healthy lunchbox snack!
