For The Cupcakes
3/4 cup unsalted butter , room temperature
1 cup granulated sugar
2 large eggs
3/4 tsp pure vanilla extract
1 1/2 cups sifted cake flour (not self-rising)
1/2 tsp baking powder
1/4 tsp coarse salt
1/2 cup whole milk

For The Frosting
8 ounces cream cheese , room temperature
1 cup confectioners' sugar
2 tsp pure coconut extract

For The Garnish
2 cups sweetened flaked coconut

    Method
  1. Preheat oven to 180 º C. Line a 12-cup muffin tin with paper liners. Keep aside.
  2. With an electric mixer on medium speed, beat1/2 cup butter and the granulated sugar until pale and fluffy.
  3. Beat in eggs, one at a time, and vanilla and mix well.
  4. Reduce the speed. Beat in the flour, baking powder, and salt, then milk.
  5. Spoon into cups. Bake until a cake tester comes out clean, 15 to 16 minutes. Let it cool.

For the frosting

    For the frosting
  1. Beat cream cheese, remaining ¼ cup butter, the confectioners' sugar, and coconut extract until fluffy. Keep aside.
