Fresher the lettuce, the crunchier your salad will be. look for lettuce that is green and curly. it adds very good flavour to the salad. if your taste buds like bitter foods, you could also add fresh red lettuce to the recipe

For the salad
1 large capsicum
1 large red capsicum
1 large yellow capsicum
1 avocado
1 small bunch of fresh curly red lettuce
1 large tomatoes
4 spring onions
For the dressing
3 tbsp olive oil
1 1/2 tbsp balsamic vinegar
2 cloves of garlic (lehsun), chopped
salt and pepper to taste
Method
For the dressing:
- Wash all vegetables thoroughly
- To cut the avacado, slice it into two halves lengthwise. remove the seed and then cut large pieces into the flesh. scoop these pieces out of the skin so that you can still retain the very green bits.
- Cut the peppers and tomatoes into large pieces, chop the spring onions lengthwise.
- Pluck out the lettuce leaves and clean the base so as to leave the leaves whole.
- Mix all the vegatables together in a salad bowl and refrigerate for 20 minutes or till cold.
For the dressing:

- Mix chopped garlic, balsemic vinegar and olive oil togther in a jar and beat well so that the oil and vinegar mix well.
- Add salt and freshly grated pepper to taste.
- Serve cold salad with dressing alongside fresh french bread or burgers.
