  1. Cut the banana leaves into circles using a 75 mm. (3") diameter cookie cutter.
  2. Apply a little oil on one side of each banana leaf and keep aside.
  3. Combine all the remaining ingredients, except the fruit salt, along with approx. . ¾ cup of water in a bowl and mix well to make a batter of pouring consistency.
  4. Add the fruit salt and 2 tsp of water over it.
  5. When the bubbles form, mix gently.
  6. Put 1 tbsp of the batter on the greased side of a banana leaf and spread it evenly to make a thin layer.
  7. Cover with another banana leaf with the greased side facing downwards.
  8. Repeat steps 6 and 7 to make 5 more pankis.
  9. Place 6 pankis at a time in a microwave-safe dish and microwave on high for 1 minute 20 seconds or till cooked.
  10. Repeat with the remaining batter and banana leaves to make 12 more pankis in 2 more batches.
  11. Serve immediately with green chutney.

Green pea panki made in microwave.. Wow.. it was just the same as you would make it in the tava or a griddle.. its very quick when sudden guest arrives at your place.. can be prepared in just 10 minutes.. this is a must try recipe.

Batter of rice flour, urad dal, green peas and green chillies placed between 2 banana leaves and steamed to perfection. Healthy and easy to make and very light to eat. Use as a appetizer or quick snack. Kids love it too.
