Homemade Cashew Butter, Indian Style recipe - How to make Homemade Cashew Butter, Indian Style

2 1/4 cups cashew nuts (kaju)
1 1/2 tbsp coconut oil
1/8 tsp sea salt (khada namak)

  1. To make {span class="bold1"}homemade cashew butter{/span}, dry roast cashews in a broad non-stick pan for 2 minutes on a medium flame, while stirring occasionally.
  2. Remove in a plate and allow it to cool completely.
  3. Once cooled, keep aside 1/4 cup of roasted cashews and coarsely crush them in a mortar pestle.
  4. Transfer the remaining roasted cashews in a big mixer.
  5. Blend for 5 to 7 minutes until it become thick paste.
  6. Add the coconut oil and sea salt and blend again for 3 to 4 minutes or till smooth.
  7. Remove in a deep bowl and add the coarsely crushed roasted cashews and mix well.
  8. Serve {span class="bold1"}homemade cashew butter{/span} or store in an airtight container and use as required.
