It has more of cocoa, with little or no milk, which is what gives it a dark colour and intense flavour. The percentage of cocoa in these chocolate slabs ranges from 70% to 99%. For home use, it is reasonable to buy 70% dark chocolate. You can use semi sweet chocolate provided it does have cocoa butter mentioned in the ingredients. The cocoa butter is what melts when dark chocolate is heated.

Microwave at 180 wats for 40 seconds. Then check to see if your dark chocolate will melt easily by using a spoon pushing downwards. We microwaved for another 10 seconds for a total of 50 seconds.

Remove dark chocolate from the microwave.

Use a spoon to mix the melted chocolate. Just a little mixing and the chocolate melts easily.

Cool the dark chocolate slightly.

Pour it in a piping bag and make a small hole at the tip using a scissor.
