Hydrebadi Platter recipe - How to make Hydrebadi Platter

1 cup parboiled , peeled and sliced potatoes
1 cup sliced paneer (cottage cheese)
1 cup sliced baby corn
1 cup boiled green peas
to be ground in a paste
1 cup coriander (dhania) leaves
1 cup mint leaves (phudina)
1 tbsp cashewnuts (kaju)
4 green chillies
2 " piece of ginger (adrak) , salt to taste , 1/4 teaspoon sugar
1 tbsp curds (dahi)
little oil for shallow frying
lemon juice , fresh chopped coriander (dhania) , chaat masala for garnishing
Method
- Heat oil in a kadahi shallow fry the potatoes paneer & baby corn one by one keep aside
- Discard the remaining oil
- For each serving add 1 tbsp of green paste
- Mix the potatoes paneer baby corn peas transfer in serving dish
- Sprinkle chat masala lemon juice &coriander
