Makes 5 sandwiches
For The Lebanese Toasted Sandwich With Spicy Garlic Hummus
10 toasted whole wheat bread slices
5 tsp chopped jalapenos
5 tsp sliced olives
20 tomato slices
30 cucumber slices
salt and to taste
For The Spicy Garlic Hummus
1 tbsp red chilli paste
1/2 tbsp roughly chopped garlic (lehsun)
1 cup soaked and boiled kabuli chana (white chick peas)
1/4 cup fresh curd (dahi)
2 tbsp olive oil
salt to taste

- Combine the kabuli chana, curds, red chilli paste, garlic, olive oil and approx. 2 tbsp of water in a mixer and blend till smooth. Keep aside.

- Place two toasted bread slices on a clean dry surface.
- Put 1 tbsp of the spicy garlic hummus on each toasted bread slice and spread it evenly.
- Sprinkle 1 tsp of jalapenos and 1 tsp of black olives on one toast.
- Put 4 tomato slices, 6 cucumber slices and sprinkle a little salt and pepper powder evenly over it.
- Cover it with other slice with the spicy garlic hummus side facing downwards and press lightly.
- Repeat steps 2 to 5 to make 4 more sandwiches.
- Cut each sandwich diagonally into 2 halves.

For the spicy garlic hummus

To make the spicy garlic Lebanese hummus, wash the Kabuli chana very well.

Submerge 1/2 cups of dried chickpeas in enough water.
- Cover them with a lid and soak them overnight.

After soaking, the chickpeas will look like this.

Drain them and remove excess water.

Put the soaked and drained chickpeas in a pressure cooker add enough water.

Pressure cook for 4 whistles or until the chickpeas are soft.

Allow the steam to escape before opening the lid. This is called the natural release method and is done by removing the pressure cooker from the hot burner and let the pressure drop by cooling down naturally.

Drain if required and transfer in a mixer jar.

Add curd.

Add red chilli paste.

Add garlic. If you are Jain, then avoid adding garlic.

Add olive oil. Use best quality olive oil for maximum flavour.

Add approx. 2 tbsp of water that will help in grinding. The authentic recipe makes use of curd and tahini hence, it does not require water. You can make use of low-fat curd if you like.

Blend in a mixer till smooth. Our spicy garlic hummus is ready!
