Lemon Butter Icing

Here is a tangy icing that feels cool on the palate, giving a refreshing and exciting twist to any sponge cake. Not only does the Lemon Butter Icing taste fabulous, it also looks a nice, pleasant yellow, adding to the visual appeal of the dessert. Use this to dress up a sponge cake, or fill into piping bags and use on cupcakes.

1 tsp lemon juice
1/2 tsp grated lemon rind
a few drops lemon colour
a few drops lemon essence
1/4 cup soft butter
1 3/4 cups icing sugar

- Method
- Sieve the icing sugar in a deep bowl and keep aside.
- Combine the butter in a deep bowl and mix it with a help of a wooden spoon till light and smooth for 2 to 3 minutes.
- Add the icing sugar gradually and mix well.
- Add the lemon rind, lemon juice, lemon colour and lemon essence and mix well.
- Use as required.
