Makes 4 to 6 servings
100 gms noodles
1 carrot , cut into long strips
1 onion , sliced
1 cucumber , sliced
1 capsicum , sliced lengthwise
a few spinach (palak) leaves
1/2 tsp sugar
3 tbsp refined oil
salt to taste
To Be Ground Into A Paste
4 cloves (laung / lavang) of garlic (lehsun)
4 red chillies
To Serve
2 tsp chilli oil
a few cucumber slices
chopped spring onions

- How to proceed
- Heat the remaining 1 1/2 tablespoons of oil and fry the paste for a few minutes.
- Add the carrot, onion, cucumber, spinach stems and fry again for 2 minutes.
- Add the fried vegetables, sugar and salt to the fried noodles and mix well.
- Top with the chilli oil, surround with cucumber slices, sprinkle chopped spring onions on top and serve hot.
