Ingredients


2 eggs
55 gms castor sugar
55 gms plain flour (maida)
a little castor sugar for garnish

Method
    Method
  1. Sieve the flour.
  2. Beat the eggs and sugar thoroughly until very thick.
  3. Fold in the flour.
  4. Grease and dust sponge finger tins and spread a little mixture in each tin.
  5. Sprinkle a little castor sugar on top.
  6. Bake in a hot oven at 400°F for 7 to 10 minutes.
  7. Cool and store.

Tips
  1. VARIATION : SPONGE FINGERS (EGGLESS)
  2. Proceed as above using ingredients for eggless sponge cake instead of the above mixture.
