Ingredients


2 small sized Carrots (1 inch cubes) ,
1/2 small sized Broccoli (separated into florets,
5-6 French beans (1 inch diamonds,
1 sized Red capsicum (1 inch cubes) small , 1 sized yellow capsicum (1 inch cubes) small ,
1 sized green capsicum (1 inch cubes) small ,
5-6 Baby potatoes (peeled and boiled) , 1 tbsp Olive oil ,
1/2 inch piece Ginger (cut into thin strips) ,
1 tbsp Cornstarch,
2 cups Orange juice,
salt to taste
1/2 tbsp Crushed red chilies,
1 tbsp Orange marmalade,
1orange peeled and segmented to garnish

Method

  1. Heat olive oil in a deep pan. add ginger and sauté on high heat. add carrots and broccoli and french beans. cook for two minutes. blend cornstarch in orange juice and keep aside. add salt, crushed red chilies and mix. add red, yellow and green capsicums and boiled baby potatoes and mix well. add orange marmalade, and mix. add cornstarch blended in
