Vegetable Croquettes recipe - How to make Vegetable Croquettes

Makes 4 servings
2 boiled , peeled and mashed potatoes
1 boiled , peeled and mashed beetroot
1 boiled peeled and mashed carrot
1 tsp chopped ginger (adrak)
2 tbsp peanuts
1 tsp finely chopped green chillies
1/4 cup besan (bengal gram flour)
2 tsp plain flour (maida)
bread crumbs
2 tbsp chopped coriander (dhania)
salt to taste
1 tsp black salt (sanchal)
oil for deep frying
To Be Mixed Together Into A Powder
2 tsp coriander (dhania) powder
2 tsp cumin seeds (jeera) powder
1 tsp garam masala
1 tsp freshly ground black pepper (kalimirch)
Method
- Method
- Heat oil and fry the peanuts and keep them aside.
- Take the boiled vegetables and mash them together.
- Add chopped ginger, green chilli, coriander leaves, salt to taste and dry roasted masala into it.
- Add the fried peanuts. Mix them well and make a dough.
- Now heat little oil in a pan.
- After that stir the above mixture until it becomes dry in nature.
- Allow the mixture to cool and take a small part of mixture and give oval shape.
- In the mean time, take besan and maida along with little salt and make a comparatively thick batter.
- Now dip the croquettes and coat with bread crumb.
- Fry the bread crumb coated croquettes in oil and serve hot.
