Wheat Couscous Salad

Couscous is african cereal like our indian sooji. It is getting global acceptance like oats. Here an attempt is made to make a salad out of it, it is inspired from african region. Couscous is energy rich, healthy cereal which can be made out of wheat or barley others. It has grainy texture. Couscous is also versatile and can be made into sweet, savory, one dish meals, fillings, porridge and many interesting dishes can be beautifully created out of couscous. 1/4 cup of raw couscous on soaking in boiled hot water gives 3/4 + amount of cooked couscous. It is light and voluminous cereal. Wheat couscous is widely available. Traditionally couscous has very good get along with kabuli chana, kesar strands, cinnamon powder, zeera powder and exotic vegetables.
Wheat Couscous Salad recipe - How to make Wheat Couscous Salad

Makes 4 to 6 servings
1/2 cup broken wheat (dalia)
2 tbsp saffron (kesar) strands soaked in 1/4 cup warm water
1/4 cup chopped cucumber
1/4 cup chopped tomatoes
1/2 cup boiled kabuli chana (white chick peas)
1/4 cup chopped spring onions
salt and freshly ground black pepper (kalimirch) powder to taste
2 tsp lemon juice
2 tsp sugar
2 tsp grated ginger (adrak)
2 tsp finely chopped green chillies
2 tbsp chopped coriander (dhania)
2 tbsp olive oil
2 tsp cumin seeds (jeera)
1/2 tsp cinnamon (dalchini) powder
For Garnishing
1 tbsp raisins (kismis)
2 tbsp sliced almonds (badam)
- Method
- Soak the broken wheat in just enough warm salted water for 10 minutes.
- Add all other salad ingredients, mix well and serve fresh or refrigerate it for an hour and serve fresh.
- Garnish it with raisins and almonds while serving.
