It is a very simple dish made with brinjals filled with soluble dietary fibre. It goes well with Rotis and phulkas.
Baigan ka Baaji recipe - How to make Baigan ka Baaji

4 brinjals (baingan / eggplant)
2 onions
little tamarind (imli) pulp
salt to taste
1/4 tsp turmeric powder (haldi)
1 tsp rasam powder or more according to taste
1 tbsp oil
few curry leaves (kadi patta)
sugar to taste
Method
- Cut the bringals and onions length wise into thin pieces.
- Pour oil in a kadai when heated add mustard seeds curry leaves haldi onions and bringals.
- Cook them in a slow flame for 5 miniutes .
- Add salt sugar rasam powder and tamarind juice and cook further till you get a nise aroma cover with a plate and keep it sim for another few minutes.
