The Basic Coriander Green Gravy is a peppy green gravy with a tangy and herby taste, which goes well with potatoes and a lot of other veggies. It has a luscious texture and a vibrant taste, thanks to flavour enhancers like onion, garlic, green chillies and ginger. You can make this gravy and use it immediately, or you can make it in the morning and store it in the fridge.


As soon as you are back from work in the evening, just toss in some cooked veggies and salt, to make a tongue-tickling subzi. However, remember that it cannot be preserved even in the fridge for more than a day as it has curds and milk.

Preparation Time:    Cooking Time:    Total Time:    Makes 1 cup

Ingredients

3/4 cup chopped coriander (dhania)
1/4 cup chopped onions
1 tbsp roughly chopped green chillies
1 tbsp roughly chopped garlic (lehsun)
1 tsp roughly chopped ginger (adrak)
1/2 tsp lemon juice
salt to taste
1/2 cup fresh curds (dahi)

Method
    Method
  1. Combine all the ingredients, except the curds in a mixer and blend till smooth using 2 tbsp of water.
  2. Transfer the mixture into a deep bowl, add the curds and whisk well.
  3. Store in an air-tight container, store in the fridge and sue as required.

This coriander and green chilli gravy has a lovely flavor and taste. Love the tinge of garlic and lemon juice.
